ADDING SAUCE TO PASTA
ADDING SAUCE TO YOUR PASTA I have recived a number of e mails from customers that even after they have followed the instructions in the Chapter on how to cook pasta they are still having a few problems with getting ready prepared sauces spread evenly on all the pasta and stopping it all ending up on the bottom of the plate .
So this is one and simple way out of this problem and will give you the same results as MAMMA did.
Having cooked your favorite pasta shape to your taste , you have to add a sauce to most pastas, Having taken the time and trouble to follow the Chapter on How to Cook pasta this is what to do;
While you are cooking your pasta , take a small pan and pour your ready made sauce into it ,and just warm gently , please do this slowly as if you give it too much heat you will get a slighty burn flavour which is not at all nice when you eat your pasta.
When the Pasta is ready strain it through a colinder and then back into the still warm boiling pan you cooked the pasta in , while warming the ready made sauce and just before you start to strain your pasta add a cube of butter to the warmed pasta sauce and allow it to melt mixing it gently to get the butter evenly spread in the sauce .
Now pour the sauce over your pasta which is still warm and stir in the sauce with a wooden spoon and then serve on warmed plates.
You will find that having added Butter the sauce will be more ready to stick to the pasta giving you an even coverage of sauce and helps it stop sliding to the bottom of your plate .
