STORING YOUR PARMIGIANO

Having been to your favorite Delicatessen or cheese shop , and having bought your chunk of Parmigiano you now have to try and store it at home.
Most people go wrong in that they place the cheese in a Sealed airtight container or wrap it in cling film and place it in the fridge and hope it will keep. When after several days they find it covered in mold they get very upset.
The way to best store this hard cheese is to wrap it in old fashioned paper or a cloth kitchen towl prefebably slightly moist . This will allow the cheese to breath and the mosit cloth will prevent it from drying out . This way your cheese will stay fresh for many days.
If after an excessive time in the fridge you find the cheese has dried out a little ,don't worry simply grate from it for your pasta ,under the drried surface you will find the cheese is still fresh.
To store freshly grated Parmigiano place in a bowl UNSEALED and just covered with loose paper kitchen towl or similar, and mix every few days, this allows the cheese to breath and not go mouldy ,It will dry a little after a several days but will be just as good to use on your pasta ,or asparagus or spinage .
When you are down to the rind , DONOT throw it away simply cut into small cubes and store in the fridge in paper towel and when you are making soup etc just pop a few cubes in and allow to melt. It is all full of flavour..
