Parmigiano Reggiano. Italy's most famous hard cheese is produced in the area around Parma in Northern Italy. It is this area and the milk produced there which gives this cheese its unique qualities. Produced using semi-skimmed-milk it is at its best at 2 years maturity during which period it goes through various processes including a spell submerged in salt vats. It is tangy with a grainy texture. No kitchen can afford to be without it.
