Taleggio is a soft cheese, made from full cream pasteurized cows milk . It is a typical cheese from the Lombardy region of northern Italy. It has a tender yellow-goldish skin, and a sweet delicate full flavoured taste. Other than served on the cheese board , its also useful in cooking in sauces , or gratine on pasta or rice with vegetables. It is especially good with fresh fruit. It is a DOC cheese , which means it is checked by the "Consorzio Taleggio"
